Tiramisu Redo
Yield: 2 servings
Ingredients
2 tablespoons boiling water + ½ teaspoon instant espresso powder OR 2 tablespoons strong brewed coffee
1 pinch fresh grated orange zest
¼ cup low-fat ricotta cheese
¼ cup low-fat Greek yogurt
¼ teaspoon vanilla extract
⅛ teaspoon almond extract
4 teaspoons maple syrup, honey, or agave
3 sheets of graham crackers, divided into halves
Optional: cocoa powder, chocolate shavings, or chocolate chips for garnishing
Mix together the espresso and boiling water, or pour coffee into a shallow dish. If using the espresso powder, stir until no clumps remain. Add in the pinch of orange zest and stir to combine. Set aside.
Use a fork or small whisk to combine the ricotta cheese, Greek yogurt, extracts, and sweetener of choice in a small bowl. Mix until creamy and set aside.
To assemble the dessert, quickly dip both sides of one graham cracker half into the espresso/coffee mixture. Move quickly, as if the cracker absorbs too much liquid it will get soggy! Place into a small dish. Top with 1 heaping tablespoon of the ricotta mixture. Layer with the following: dipped graham cracker, heaping tablespoon ricotta mixture, dipped graham cracker, heaping tablespoon ricotta mixture, then dust with optional chocolate topping of choice.
Repeat process with the remaining ingredients to complete the second serving.
Serve immediately, or can be chilled for up to 2 hours before serving. Note: the longer this dessert stays in the refrigerator, the greater the chance is that the graham crackers will begin to dissolve.
